Hojicha is a tea made by roasting tea leaves in a porcelain pot over charcoal. Since the roasting temperature is around 200 degrees Celsius the leaf color tints from green to reddish brown and the amino acid theanine disappears. Instead, some are transformed into a substance called pyrazine. Pyrazine is an aroma component that not only enriches the aroma of roasted green tea, but also has health benefits such as improving blood flow.
